Basic Corn Muffins

Here's a cornmeal muffin recipe that's pretty simple, but lends itself well to improvisation. Try adding corn, jalapeno peppers or Cheddar cheese making it perfect for breakfast. These tender and sweet cornbread muffins are the perfect accompaniment to any Southern barbecue or Southwestern style dish.

Ingredients

  • 1 cup Cornmeal
  • 1 cup All-Purpose Flour
  • 1/3 cup Granulated white sugar
  • 2 tsp Baking powder
  • 1/2 tsp Salt
  • 1 Egg
  • 1/4 cup Oil (any cooking oil)
  • 1 cup Milk

Instructions

  • 1 Keep all ingredients ready.
  • 2 In a bowl, mix all the dry ingredients.
  • 3 In another bowl, mix all wet ingredients.
  • 4 Mix the wet and dry ingredients to form a batter.
  • 5 Preheat oven at 200 deg C (400 deg F). Line 12 cupcake liners to a cupcake baking tray. Pour the batter equally in the 12 liners.
  • 6 Bake for 15 minutes and check to see if a tooth pick inserted in one of the muffin comes out clear.
  • 7 Serve as desired.
