Goan Chicken Xacuti

Xacuti (pronounced “Sha-kuti”) is a classic Goan dish. It has a rich delicious blend of local spices and fresh coconut. Fiery and loaded with flavor, it's absolutely delicious! This is how my mom prepares chicken Xacuti (she learnt this method from my dad) by marinating it first in a green masala.

Ingredients

For green masala:-
  • 1/4 cup Coriander leaves
  • 10 Garlic cloves (roughly chopped)
  • 2 Green chillies (roughly chopped)
  • 1 inch Ginger Piece (roughly chopped)
  • 1 tsp Salt
For Xacuti masala:-
  • 1 1/2 Onion (sliced)
  • 1/2 cup Freshly grated coconut (half coconut)
  • 1/2 tsp turmeric powder
  • 10 cloves
  • 2 inch Cinnamon stick
  • 2 Green Cardamom
  • 1 tsp Black Pepper Corns
  • 1/2 tbsp White Poppy Seeds
  • 1/4 Poppy flower (Star Anise)
  • 1/2 Mace (Patri)
  • 1/4 tsp Aniseeds
  • 1 tbsp Corainder seeds
  • Pinch Nutmeg
  • 5 Dry Kashmiri Chillies
Other Ingredients:-
  • 1/2 kilograms Chicken (cut into small pieces)
  • 1 Onion (sliced)
  • 2 Green chilies (slit)
  • 5 Garlic cloves (sliced)
  • 10 Fresh Curry leaves
  • 4 tbsp Coriander leaves (chopped)
  • Oil (as required)

Instructions

  • 1 Grind the green masala in mixer grinder using sufficient water and apply it to chicken pieces. Marinate for at least 15 minutes.
  • 2 In a pan, add 2 tbsp oil and add onions and coconut. Fry till nicely browned. (use onion and coconut under Xacuti masala ingredients) Cool completely.
  • 3 Dry roast the remaining ingredients under Xacuti masala. (All the spices except turmeric powder) Cool completely
  • 4 Grind coconut onion mixture with roasted spices with sufficient water to a fine paste. Leave it aside.
  • 5 In a vessel, add 3 tbsp oil and fry the Onion along with green chillies and curry leaves till onion are soft.
  • 6 Add the marinated chicken and cook covered for 10 minutes.
  • 7 Add the Xacuti masala paste and cook for 2 minutes. Then add about 1-1 ½ cups water, cover and cook for next 15-20 minutes till chicken is cooked.
  • 8 Add coriander leaves. Tastes the best with Goan Pao. (See recipe notes below for homemade pao recipe
