1 | In a skillet, add 2 tbsp Oil. Fry the Onions till soft. Add the green chilies and tomatoes and cook for another few minutes. | |
2 | Add the potatoes, kokum and sausages. Mix in well. Add one cup water. Cover the skillet with lid and cook for 15 mins. | |
3 | Cook till the water dries up. | |
4 | Chilly fry goes well when served with Goan Pulao. (See recipe note below) OR Stuff the chilly fry in Goan Pao and enjoy ! (See recipe note below) |

I follow you on FB and here. I ate a Goan sausage prepedation which seemed like they were just fried with some onions. I tried to replicate at home to no avail. I suppose it was a spice blend or method of preparation that was differentiating. When I tried preparing them, sausages tasted a little simple a little undercooked and onions didn’t shrink fully. I only added salt nothing else. I let the sausages and onions cook in steam by adding water and fried it in its own fat a little. Could you help me decode this pls. I’ve scoured the internet trying to recreate this. I’m not fully Goan and am struggling please do me a solid. Feel like there’s some trove of knowledge I have no access to.
