Green Masala Beef Liver

This beef liver recipe makes use of a Goan based green masala and this dish is a semi dry liver dish. Enjoy it with bread or chapatis.

Ingredients

For the Green Masala Paste:-
  • 1 Dry Kashmiri chili
  • 3 Green chilies (roughly chopped)
  • 1/2 inch Cinnamon stick
  • 4 cloves
  • 1/2 tsp Black Peppercorns
  • 1/2 tsp Cumin seeds
  • 1/2 cup Coriander (roughly chopped)
  • 1/2 tsp turmeric powder
  • 1/2 inch Ginger Piece (roughly chopped)
  • 4 Cloves garlic (roughly chopped)
  • 1 tsp Granulated white sugar
  • 8 tbsp Vinegar (to grind the paste)
Remaining Ingredients:-
  • 1/2 kg Beef Liver
  • Salt (as required)
  • 2 large Onions (make a paste)
  • 5 medium sized Tomatoes (make a puree)
  • 2 Green chilies (chopped)
  • 2 tbsp Butter
  • 1/4 cup Oil

Instructions

  • 1 Wash the liver and cut into 1/2 inch cubes.
  • 2 Grind all the ingredients under 'For the Green Masala Paste'.
  • 3 Apply this masala to the liver cubes and keep aside for at least 30 minutes.
  • 4 In a pan, add oil. Fry the onion paste till light golden brown. Then add the marinated liver pieces.
  • 5 Stir well and keep cooking on medium high heat till mixture starts getting dry. Now, add the tomato puree. Add 1/2 cup water.
  • 6 Cook liver till done (DO NOT cover liver while cooking as it tends to get rubbery). Add the green chilies.
  • 7 Drop in the butter. Stir well till butter is melted.
  • 8 Beef liver is now ready! Enjoy with pao or rotis. (See recipe notes below).
