Non-Alcoholic Eggless Raisin Cake

A light moist fruit and nut cake that has no alcohol nor eggs in it. A cake that can be enjoyed by people with eggless and non-alcoholic requirements and specially for kids during Christmas time. This recipe yields 2 loaf pan (9 X 5") sized cakes. This cake is done by boiling the raisins in water, butter and brown sugar.

Ingredients

To boil:-
  • 5 cup Water
  • 1 1/2 cup Butter (unsalted)
  • 2 cup Brown Sugar
  • 4 cup Raisins
  • 4 tbsp Sugar Caramel or molasses (optional , for a darker color for your cake)
  • 2 tsp Salt
For Cake Batter:-
  • 1 tsp All spice powder ((cinnamon, clove ,nutmeg, cardamom mixed)optional,you can skip this)
  • 1 tsp Vanilla essence (if your not using spice mix powder)
  • 4 cup All-Purpose Flour
  • 1 tsp Baking powder
  • 1 tsp Baking Soda
  • 1 cup Cashewnuts (or any mixed nuts of your choice)

Instructions

  • 1 Preheat oven at 325 deg F (160 deg C). Chop the nuts. Keep aside.
  • 2 In a saucepan, add 5 cup water , butter , brown sugar, molasses and salt. Bring it to a boil.
  • 3 Add the raisins.
  • 4 Boil them for about 8 minutes. Let it cool till lukewarm.
  • 5 Add in the flour, spice mix (or vanilla essence) , baking powder and baking soda along with the nuts.
  • 6 Mix well.
  • 7 Line 2 loaf baking pans (9 X 5") with parchment papers. Pour cake batter equally in the two baking pans.
  • 8 Bake for about 1 hour or till a skewer or toothpick inserted in cake comes out clean.
  • 9 Cool the cakes and slice it . Enjoy!
