Onion, Potato & Mushroom Frittata

Frittata is an egg based Italian dish that can be served for breakfast, lunch, or dinner. It is very much similar to an omelette or crust less quiche. Wise way of adding veggies to your kids diet.

Ingredients

  • 5 large Eggs
  • Oil (as required)
  • 1 large Potato (Peeled and cubed)
  • 1 large Onion (Sliced)
  • 1/2 cup Mushrooms (chopped)
  • 1/2 tsp Salt
  • 1/3 cup Cheddar cheese (shredded)

Instructions

  • 1 Beat all the eggs in a bowl. Add the salt.
  • 2 In a skillet, add 1 tbsp Oil, fry the potatoes.
  • 3 Add another 2 tbsp oil. Add the onions and fry till half done. Next, add the mushrooms and cook them.
  • 4 Pour the beaten egg over the veggies.
  • 5 Give it a quick stir mixing everything well using a spatula.
  • 6 Cook for 3 minutes.
  • 7 Add shredded cheddar cheese.
  • 8 Cover the pan for few minutes till the cheese melts.
  • 9 Cut and serve.

Recipe Notes

You can use any vegetables of your choice.
