Tawa Bhindi Masala

Fried Bhindi (okras/ladyfingers) in a thick gravy masala with Indian spices.

Ingredients

For Frying Okras:-
  • 30 Okras /Ladyfingers/ Bhindi
  • 1 tbsp Oil
  • 1/2 tsp Salt
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
For the Masala:-
  • 3 tbsp Oil
  • 1/2 tsp Fennel seeds
  • 1 large Onion
  • 1 Green chili
  • 4 Garlic cloves
  • 1 inch Ginger Piece
  • 3 medium sized Tomatoes (Pureed)
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp Coriander powder
  • 1/2 tsp Cumin powder
  • 1/2 tsp Garam masala
  • 1/2 tsp Dry mango powder (amchur powder)
  • 1/2 tsp Chaat masala
  • 1 tbsp Kasoori meethi (dry fenugreek leaves)

Instructions

Fry the Okras:-
  • 1 Wash and wipe the okras.
  • 2 Cut into 1- inch long pieces.
  • 3 Heat 1 tbsp oil in a skillet. Add the okras along with 1/2 tsp salt. Fry the okras till cooked and browned on all sides. Now, add 1/4 tsp tumeric powder and 1/2 tsp red chili powder. Fry for a minute. Keep okras aside.
Prepare the Masala:-
  • 4 Grind onion, green chili, garlic, ginger with 1/4 cup water to form a smooth paste. In the same skillet, add 3 tbsp Oil. Add the fennel seeds. Fry the onion paste till a golden brown color.
  • 5 Add the tomato puree along with turmeric powder, chili powder, garam masala, coriander powder and cumin powder. Fry for 2-3 minutes. Add 1/2 cup water , cover the pan and cook on low flame for 12-15 minutes stirring occasionally.
  • 6 Once you get a nice thick masala, add amchur powder, chaat masala and kasoori meethi(Crush kasoori meethi between palms to release the aroma) . Cook for another 2 minutes.
  • 7 Add the fried okras. Mix well.
  • 8 Serve hot with rotis or parathas. (See recipe notes below for laccha paratha recipe link).
