Keep ingredients ready. Wash the rice and soak it overnight. |

Next day, drain all water from rice. Grind the rice finely into a thick batter using coconut water (or plain water...See recipe notes below). Grind the coconut finely and add it to the rice mixture. |

Add the yeast and sugar. Mix well. |

Allow it to ferment for about 3 hours until you see the mixture rise and bubbly. Now, add the salt and mix well. |

Keep your steamer ready with water. Grease your sanna molds with some oil. Fill the sanna molds with batter , filling them half way. |

6 |
Place the molds in the steamer. Cover the steamer. |
|
7 |
Steam them for 12-15 minutes on medium high flame. |
|
8 |
Unmold the sannas and place them in a muslin cloth. Cover them in the cloth until ready to eat! |

Sannas are ready ! |

Love your recipe Xanti everything was exact except that the sannas did not turn out as good as yours …I meant to say not fluffy like yours but rather flat. Even the batter came up good n blubby. Please advice.

1 cup rice is usually 175-185 grams .
In recipe it calls for 2 cups rice (and uses 1 tsp yeast for 2 cup rice ) .
your receipes are so easy , and well written , so easy to understand and follow incase we do not get things that are easily available, have tried 3 receipes and all are successful

Don’t leave the batter , use it all up at once as it has yeast in it 🙂
I’ve now seen and heard that some now use sprite, instead of yeast. I have not tried this twist though.

3 tbsp sugar plus the yeast and about 1/4 cup water water . Mix them together . Leave aside for 15 mins , it will activate the yeast (you will get a bubbly mixture ) .
Add to sanna mixture and proceed .

Hi , I followed your recipe not sure where I went wrong but the sanna’s wouldn’t form, did I put too much of water, the batter looks the same as your’s .. I kept it for 3 hours to ferment,. do you know how much of coconut water you put to grind to a paste. I am not giving up I am going to try again but If I could only figure out where I went wrong?

Next time make sure to grind with little water at a time as it’s difficult to fix it later if batter is thin.
Probably you could have added rice flour to thicken it further or if you had more soaked rice grind and add that

I made sannas today….They tasted delicious. Only 1 thing they came out like ragi sannas…. I mean brownish rather than white. What went wrong? I used raw red rice 2 cups….. …. So i can improve nxt time

We can get so carried away with all this instant food and fast food available all around, but I want to carry on our Goan traditional cooking as I miss the food we ate as children. I never really knew what recipe to follow and it was never really that good.
