Before the buffet system was introduced in Goa, food courses used to be served individually in plates. This was practiced especially during Catholic marriages. The method of service was known as servico volante wherein soup, a fish dish, and a meat dish and pulao were served consecutively. The meat dish generally comprised a stew.
The stew is usually prepared with pork , beef , vegetables and macaroni.
In this recipe, I have prepared the stew with beef ,vegetables and macaroni. You can add pork to it too.

Well yes it was commonly served for weddings and other village party’s til the 80’s, even today the old modest traditions are still followed , but yes the fashion of competitive buffets with sometimes stale food overtook this modest tradition. Having said this goans prepared beef stew as a part of their home meals too. This is one dish on a goan table, Infect yesterday my wife prepared beef stew.

Yes, the macaroni needs to be precooked …theres no curry in this…its like almost dry with very little coating of the masala on the veggies, macaroni and beef 🙂

Hi there – just saw your recipe for goan stew. Do I need to marinade the pork in the same way as meat and cook separately each with onion and follow the recipe.
