Egg Bhurji

Egg bhurji is a common Indian breakfast. It is a very easy and quick scrambled egg recipe and an Indian style of making scrambled eggs with onions, tomatoes and chillies.

Ingredients

  • 6 Eggs
  • 1/2 tsp Pepper powder
  • 1/2 tsp Salt
  • 1/2 tsp turmeric powder
  • 2 tbsp Milk
  • 2 Onions (finely chopped)
  • 2 Tomatoes (finely chopped)
  • 2 Green chillies (finely chopped)
  • 2 tbsp Coriander (finely chopped)
  • 2 tbsp Oil

Instructions

  • 1 In a bowl, mix egg, salt, milk, pepper and turmeric powder. Beat well and keep aside. In a pan, add oil. Add onion and chilies and fry till onion is soft and translucent. (Do not brown it)
  • 2 Add the tomatoes and cook for about 5 mins till soft but not mushy.
  • 3 Add the egg mixture and keep stirring quickly till done.
  • 4 Add coriander and serve hot with paranthas, bread or pao . (See Recipe notes for pao recipe)

Recipe Notes

  1. Milk is added to make the bhurji nice and moist.
  2. Make sure not to brown the onions.
  3. To make a spicier and masala version of this bhurji by adding ¼ tsp chili powder and ½ tsp pav bhaji masala to the egg mixture.
