Prepare the Boondi batter:- |

In a bowl, add the besan flour. Add a little water(about 1/4 cup) and keep stirring the flour till you get rid of all the lumps in the flour. Add the remaining water. (I used 1/2 cup water to make this batter). Add 2 tbsp oil. Mix well. |

Batter should be thick and at the same time free flowing. Keep the battered to rest for about 20-30 minutes. Prepare the syrup. |

Prepare the Sugar Syrup:- |

In a vessel, add the sugar and 1 cup water. Bring it to a boil. |

Keep boiling it for about 5 minutes till you a one thread consistency. To check for one thread consistency, take a few drops of sugar syrup in plate, cool it and test it between your fingers as seen in the picture. It is not ready yet. |

Boil it for few more minutes (about 2-3 more minutes while you keep checking for the consistency). Check again. You should be able to get a thread when you keep tapping your fingers with the syrup. Syrup is now ready. Keep it aside and prepare the boondis. |

Chop the almonds and crush cardamom lightly and keep aside. |

Prepare the Boondis:- |

We will make use of this ladle to make the boondis. |

Take the boondi batter that was resting and mix it well again. Add another 2 tbsp water to it and mix it well. |

In hot oil, place the ladle over the vessel as seen in the pic and pour some batter onto the ladle. The batter begins to drop through the ladle holes to form the boondis. (Do not overcrowd the boondis. Make just enough at a time so that it covers the entire vessel). |

Fry them for a minute. |

Remove them immediately after a minute and drain them on a paper absorbent towel. |

Prepare all the boondis in the same way till all the batter had been utilized. |

Prepare the Laddus:- |

Put all the boondis along with the cardamom and almonds in the sugar syrup. |

Mix well. Keep aside for about 30-40 minutes. |

After about 30-40 minutes, your laddu mixture should look like this. |

Mix well again. |

Apply water to both your palms and take sufficient mixture to form laddus. (Use water on your palms every time you make a laddu). You can make small, medium or large sized laddus as per your preference. |

I made small sized laddus and then placed them in small cupcake paper liners.
(I got about 18 small sized laddus with this mixture, depends on the size of the laddus). |

Allow them to cool completely. (I made about 1.5 times the recipe). |

Yes. But need be too hot. Just sufficient enough in a free flowing form where you will be able to mix in the prepared boondis.

You meant the ladle ? The ones with holes …as you see in the picture …you may get steel or aluminum ones too!
