Coconut Ice

Coconut Ice is a sweet specially made during Christmas season. Its very easy to prepare with just 3 main ingredients, no cooking involved and can be made in a jiffy! Do give it a try this Christmas.

Ingredients

  • 1 Condensed Milk Tin/can (I used 396 gms tin)
  • 325 gms Confectioners or icing sugar
  • 325 gms Desiccated coconut
  • 1 tsp Vanilla essence
  • Food colors (red or green or both , optional)

Instructions

  • 1 Keep ingredients ready. (I will be using gel colors, you can even use liquid food colors).
  • 2 Take 2 bowls and divide condensed milk into 2 portions. Add red/ pink to one portion and green color to the other portion. Add 1/2 tsp vanilla essence to each mixture. Mix them well separately.
  • 3 Take the green mixture, add half the quantity of icing sugar to it. Mix well.
  • 4 Now, add half the quantity of desiccated coconut to it. Mix well.
  • 5 It will get a little difficult at this point to mix it. Mixture tends to get harder.
  • 6 Place mixture on a parchment or wax paper and use another wax paper over mixture to roll it out to desired thickness. Leave this aside.
  • 7 Repeat steps 3, 4, 5 with red/ pink mixture with the remaining icing sugar and desiccated coconut.
  • 8 Place pink/red mixture over the green layer.
  • 9 Flatten it out. Let this dry for 30-45 minutes.
  • 10 Cut it into strips of desired sizes.
  • 11 Cut into cubes of desired sizes. Allow to dry preferably overnight at room temperature.
  • 12 Store in air tight container for a week to 10 days . Enjoy !
