Filoz

Goan mothers and grandmothers often make sure that there’s some sweet treat ready before the kids come home back from outdoor play or tuitions in the evening. Filoz make a perfect treat for evening tea time. Filoz are a type of pancake prepared using jaggery and bananas. These are usually prepared with over ripe bananas.

Ingredients

  • 1 cup Wheat flour
  • 1 Large Banana (Over ripe)
  • 1 Egg
  • 1/2 tsp Salt
  • 100 gms Palm Jaggery
  • 1/2 cup Freshly grated coconut
  • Milk (or water, as required to make thick batter)
  • Ghee (clarified butter to grease pan)

Instructions

  • 1 Mix jaggery and coconut together and keep aside.
  • 2 In another bowl, mix in the flour with salt, banana and egg.
  • 3 Mix the jaggery mixture in banana flour mixture.
  • 4 Add milk or water little at a time and keep stirring the mixture making sure it form a thick pancake kind of batter.
  • 5 Heat and grease a pan with ghee and pour a spoonful batter forming small pancakes.
  • 6 Check to see the edges of filoz start to turn brown.
  • 7 Flip other side.
  • 8 Enjoy at tea time!
