Make a sugar syrup using sugar, water and saffron till it reaches jalebi syrup kind consistency. |

In a bowl, add flour, corn flour, hot oil, curds and enough water to make a thick pancake type batter. Finally, add the food coloring to achieve a golden yellow color. (or just keep it white , don't add color).
Cover the bowl and leave the batter to ferment in a warm place for 12 hours or overnight. The batter will rise and become noticeably fluffier than it was the night before. It is now ready to use.

Whisk fermented batter and pour in plastic bag to form cone and cut a small hole in bag and drizzle in a circular motion in hot oil to form jalebis. (I used a icing metal nozzle) |

Turn the jalebis and fry till slightly browned. |

Soak jalebis in hot sugar syrup for 10 mins.

Remove jalebis from syrup and serve them warm! |
