Mango Recheado Squids

My First Innovation for a Challenge. Accepting the challenge with given five ingredients in the Mystery Box- Mango, Red Chilies, Jaggery, Spinach and Cashew nuts... had to come up with an innovative dish that's Goan with a twist. I gave a twist to the Goan Classic "STUFFED SQUIDS" to make it "MANGO RECHEADO SQUIDS" using the most popular Goan Rechado Masala . Stuffing made with squid tentacles, ripe mangoes, spinach and the masala, then finally tossed squids in cashewnuts.

Ingredients

For the Stuffing:-
  • 12 Squids (cleaned, chop tentacles)
  • Oil (as required)
  • 1 small sized Onion (finely chopped)
  • 2-3 tbsp Goan recheado masala (see notes below for recipe)
  • 1/4 cup Ripe Mango (cubed )
  • 1/4 cup Spinach (chopped)
  • Salt (as required)
Other Ingredients:-
  • 1 tsp Goan recheado masala (see notes below for recipe)
  • 2 tbsp Cashew Nuts

Instructions

Prepare the Stuffing:-
  • 1 Given five ingredients - Mango, Red Chilies, Jaggery, Spinach and Cashew nuts.
  • 2 My ingredients are ready.
  • 3 In a pan, add 2 tbsp oil. fry onions till soft. Add the masala. Saute for 30 seconds.
  • 4 Add in the chopped tentacles. Cook for 2-3 minutes.
  • 5 Add the ripe mangoes, adjust salt. Mix well.
  • 6 Add the spinach. Cook for another 2-3 minutes.
  • 7 Stuffing is ready. Keep it aside.
Stuff Squids and Cook them:-
  • 8 Stuff the squids with the prepared stuffing. (Check recipe notes below on ;how to clean squids;).
  • 9 In a pan , add 2-3 tbsp oil, add the squids, fry for 2 minutes on all sides.
  • 10 Add 1 tsp masala and remaining stuffing.
  • 11 Saute for 5 minutes, toss in the cashewnuts. Cook for another 2 minutes.
  • 12 Serve !!!
  • 13 Enjoy !!!
