Cut the boiled eggs into pieces as desired. |

In a pan, add the oil. Fry the onions till soft. Add the tomatoes and cook them on low flame till tomatoes turn soft and mushy. Now, add all the masalas except the garam masala. Fry for 30 seconds. |

Add the coconut milk and salt. Cook for 2 minutes. |

Add the chopped eggs. Mix lightly. Cook for 2-3 minutes. Add the garam masala. Cook for another minute. |

Sprinkle coriander leaves and mix it. Adjust the salt as required. |

Serve hot with chapatis or naan. |

Hi Xanti, I made this today for lunch and it turned out well; I did not cut the eggs into pieces; just kept them in halves; my family said it reminded them of caldine curry
