Mild Coconut Egg Masala

This is a recipe that makes use of boiled eggs in a coconut milk based spice mild curry. It it a semi gravy dish and a very much kid friendly recipe.

Ingredients

  • 5 Eggs (boiled)
  • 1 large Onion (chopped finely)
  • 2 large Tomatoes (Chopped finely)
  • 1/4 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp Coriander powder
  • 1/4 tsp Cumin powder
  • 1/2 cup Coconut Milk
  • 1/4 tsp Garam masala
  • 2 tbsp Coriander (chopped finely)
  • 2 tbsp Oil
  • 1/2 tsp Salt

Instructions

  • 1 Cut the boiled eggs into pieces as desired.
  • 2 In a pan, add the oil. Fry the onions till soft. Add the tomatoes and cook them on low flame till tomatoes turn soft and mushy. Now, add all the masalas except the garam masala. Fry for 30 seconds.
  • 3 Add the coconut milk and salt. Cook for 2 minutes.
  • 4 Add the chopped eggs. Mix lightly. Cook for 2-3 minutes. Add the garam masala. Cook for another minute.
  • 5 Sprinkle coriander leaves and mix it. Adjust the salt as required.
  • 6 Serve hot with chapatis or naan.
