In a skillet, add the oil. Fry the onions till soft. Add the ginger garlic paste, garlic, mince, salt, vinegar, turmeric powder. Mix well. After 5 minutes, add chili powder and cumin powder. Cook till mince is done. Add the garam masala powder. Mince has to be dry. (See recipe notes below). Let the mixture cool completely. |

Grind the mixture finely. Place mixture in a bowl. |

Add one egg, breadcrumbs, green chilies, coriander. Mix well, adjust salt if required. |

Shape into croquettes. Dip croquettes in beaten egg(mixed with 1 tbsp water). Coat in semolina or bread crumbs. |

Prepare all the same way till all mixture has been utilized. |

Deep fry them in hot oil. (See recipe notes below). |

Deep fry till you get a nice golden brown color. (See recipe notes below). |

Hi Xanti. Lovely recipe. I tried this twice and both times the croquettes cracked in the middle and some broke off while frying. The taste was amazing though. Any suggestions what I did wrong?

Try and keep the mince mixture as dry as possible…Deep fry them quickly, don’t keep them in oil for too long, they tend to crack.
Once croquettes shaped keep in fridge for somtime they harden …den we can dip in egg n semolina b fry

Form the croquettes and freeze them
When you need them , fry them directly on medium to low flame while frozen .

Just a query. For how long approximately do we have to deep fry them if using rawa as the coating?
When I fried the 2nd batch which I had stored in the freezer, I fried them for about 2-3 minutes on a low-medium flame. However, there were slight cracks in the croquettes.

Since the meat and mixture is already cooked , you don’t have to deep fry them for too long , it can lead to cracks … also if your mixture is slightly wet it will lead to cracks

For croquets I don’t add water as the meat will release its own water and the mixture for croquets have to be dry …
When I cook regular mince I do add water. Not for croquets

Try adding breadcrumbs to the mixture to soak up all the moisture .

Just one question- do we have to deep fry the croquettes? Can they be shallow fried in a frying pan?

I would like to try this recipe. But I was not sure about two ingredients.
1. Vinegar: Are you using regular synthetic vinegar or Goa vinegar?
2. Garam masala: We have a zillion garam masala and it will be the most important ingredient decicing the overall taste of the croquettes. So what garam masala to users.?And is there a specific one,? Any brand? or a recipe for it?

Use any vinegar that’s available to you …
I use white vinegar here in the US …
Garam maslaa I use any readymade ones
Which ginger do you use in the US
The ones we get at Indian stores (same that we get in indian )

Hi Xanti, the croquettes turned out perfect. Also after removing from the freezer and frying them after a couple of days was perfect. Usually they would soften and crack while frying. Thanks

Hiya, I tired the recipe the croquettes cracked while I was deep frying, everything seems easy until I reached the frying step…..( So disappointed….its a bit tricky 😕 )
