Peanut Brittle (Chikki)

Brittle is a type of hard sugar candy consisting nuts such as pecans , cashewnuts , almonds, pista ,peanuts etc . This is an easy peanut brittle microwave recipe. Peanut brittle is also known as chikki in Goa (India). But made usually using Jaggery . This recipe uses corn syrup. Usually available here in the US during holiday season.

Ingredients

  • 1/2 cup Light corn syrup
  • 3/4 cup Granulated white sugar
  • 1 1/4 cup Roasted peanuts
  • 1 tbsp Butter
  • 2 tsp Vanilla extract
  • 1 tsp Baking Soda

Instructions

  • 1 Keep ingredients ready.
  • 2 In a microwave safe glass bowl, mix sugar and corn syrup. Microwave for 3 mins.
  • 3 Add peanuts, mix well. Microwave again for 3 mins.
  • 4 Add butter and vanilla essence. Stir well till butter melts. Microwave for another 2 mins. You will get a tanned color.
  • 5 Mix in the baking soda. It will foam up.
  • 6 Microwave for the last time for 30 seconds. It will foam up well now. Mix thoroughly.
  • 7 Spread immediately on a greased silicon mat or butter / wax paper. Allow to cool completely.
  • 8 Lift it and drop on kitchen surface, continue this till broken into pieces. Store in airtight container.

Recipe Notes

  • I used a microwave of 900 watts.
  • Microwave for the time mentioned.
  • Make sure to use a glass bowl which is deep enough as the mixture tends to foam and rise up in the end.
