Mix all the ingredients for Batter marinade. |

Add 1 tbsp water and make a thick batter. |

Shallow fry or deep fry the prawns in batches and keep them on an absorbent paper towel. |

Make a mixture of pineapple juice (or water), vinegar, ketchup and cornflour. Mix well. Keep aside. |

In a pan, add 3 tbsp oil and add the garlic, ginger. Fry for a minute. Add the bell peppers and carrot and fry for another 5 minutes. |

Add the pineapple juice mixture gradually, stir well. |

The sauce will start to thicken. |

Once sauce is thickened, add the prawns. |

Cook for 2 minutes. Adjust the salt and vinegar.

Serve hot with fried rice or noodles. (See Recipe notes below). |
