Gons (Teias de Aranhas)

'Teias de Aranhas' which means 'spider webs' or 'cobwebs' in Portuguese also popularly known as 'gons' in Goa, is a tender coconut sweet that's made during Christmas season. Very easy and a quick recipe that makes use of simple ingredients, that's tender coconut and sugar which are cooked together and then placed on wax or baking papers.

Ingredients

  • 1 large Tender Coconut
  • 150 grams Granulated white sugar
  • 1/2 tsp Vanilla essence
  • Pinch Salt
  • wax / baking (for laying the gons, once cooked)

Instructions

  • 1 Break the tender coconut into half and reserve the water.
  • 2 Remove kernel from the coconut shells and slice into thin slices as shown using a slicer. (If you want , you can make the strips more thinner by further cutting individual strips into two strips, need patience for that ! :) )
  • 3 Drop the coconut strips into the tender coconut water for about an hour. Cut wax / baking paper into 12 (3 X 3 inch) squares and keep aside.
  • 4 Arrange the 12 crepe papers on a table top and keep them ready. Now, in a pan, add 1/4 cup water along with the sugar. Allow the sugar to boil and get slightly thick.
  • 5 Now, add the coconut strips ( Make sure that you drain the coconut strips completely out of the water before using ).
  • 6 Cook on medium flame, keep stirring.
  • 7 Add vanilla essence and pinch salt.
  • 8 Cook till mixture gets thick and starts to leave the sides of the pan.
  • 9 Put about a tbsp mixture on each of the wax / baking paper and allow it to cool and dry completely. Store, serve as required.

Recipe Notes

Do not overcook the mixture, it will tend to change color to a brownish shade !
