Spicy Cashewnut Chicken

This is a great spicy chicken starter, simple to make.

Ingredients

For the Marinade:-
  • 1 tsp Salt
  • Lemon juice (of half lemon)
  • 2 tsp Ginger garlic paste
  • 1 tbsp Cornflour/ cornstarch
  • 1 tbsp All-Purpose Flour
  • 1 tbsp Rice flour
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp Pepper powder
  • 1/2 tsp Garam masala
  • 1/2 tsp Cumin powder
  • 1 Egg (Lightly beaten)
Other Ingredients:-
  • 500 grams Chicken (boneless, cut into 1/2- 1 inch cube sizes)
  • Oil (as required)
  • 4-5 tbsp Cashew nut pieces
  • 4 Dry Kashmiri chilies
  • 1-2 large Onion (cut into cubes)
  • 3 tbsp Tomato Ketchup
  • 2 tbsp Soya sauce (low sodium)
  • 2 tbsp Vinegar
  • Salt (as per taste)
  • Coriander (chopped)

Instructions

  • 1 Marinate the chicken pieces in the ingredients mentioned under ;for the marinade'. Keep aside for atleast 30 minutes or marinate overnight.
  • 2 Deep fry the chicken pieces.
  • 3 Drain on an absorbent paper towel.
  • 4 In a pan, add oil, red chilies and cashew nut pieces. Fry till cashew nuts turn golden brown in color.
  • 5 Fry the onions till soft. Add the sauces and vinegar as mentioned above.
  • 6 Add the chicken pieces. Mix well. Add salt as required.
  • 7 Sprinkle with fresh coriander.
  • 8 Serve hot!!!
